Chocolate Bottomed Macaroons

Chocolate MacaroonsOriginally, macaroons were small cakes, made primarily of almonds.  Now, macaroons are considered cookies and they are always popular.  I make mine with pure coconut, a little sugar and some egg white to bind it altogether. They can be fully dipped in chocolate or they can be just half-dipped. Most people prefer the half-dip. Easier to eat and a good balance of flavors.
